Fish Stew

Ingredients

  • 2 Onions
  • 4 Cod Fish Fillets (or any white fish - Frozen or Fresh)
  • Olive oil
  • 2 Lemons
  • Tahini sauce - half cup
  • Salt & Pepper
  • Water
  • Almonds & pine nuts

Preparation

  • Heat the skillet - put olive oil and Cod Fillets and cook it - turn to make sure it is cooked through then put aside
  • Cut onions into thin wedges
  • In the same skillet pour olive oil and sautee onions until they are light pink
  • Cut the Cod into small cubes and sautee with the onions adding salt & pepper
  • In a bowl, mix tahini sauce, lemon juice and water
  • Pour on top of the fish and let it boil for a while.
  • Toast Almonds and pine nuts

Serve on a bed of greens or with a side of brown rice and top with toasted almonds & pine nuts
