Green Chard and Lentils Soup

Ingredients

  • ‍Green Chard ~1 bunch
  • ‍Cilantro ~1 bunch
  • ‍Brown Lentils ~1 and ½ cups
  • ‍Onion ~ 1 (Big)
  • ‍Potato ~ 1
  • ‍Lemons ~ 2 Squeezed
  • ‍ Garlic ~ 8 Cloves
  • ‍Olive Oil ~ Quarter Cup
  • ‍Water
  • ‍Salt & Pepper to taste

Preparation

  1. Wash and Rinse the lentils and leave them on the side for now.
  2. Wash the green chard and chop thin
  3. Chop the onion
  4. In a pot combine the chard, lentils and onions
  5. Wash and chop the cilantro and then add garlic on top with some salt and mince/crush to get a little mushy then add to pot
  6.  Cut potatoes into cubes and add
  7. Add oil
  8. Cover the whole mixture with water (1 inch over) – add salt and pepper to tasteand let it boil
  9. ‍Smash and stir some of the potatoes so it acts like a thickener
  10. Salt & Pepper to taste Add lemons to taste
