One Skillet Spinach

Ingredients

-       2 bags of chopped organic spinach (or fresh organic spinach)

-       2 Onions

-       8 cloves garlic

-       Salt (to taste)

-       2 lemon squeeze

-       2 tbsp Coconut oil or olive oil

 

Preparation

-       Cut onions into wedges

-       Crush garlic and salt together to a paste

-       Put the spinach in a strainer and wash them well

-       In a skillet let the coconut oil melt then add the onions

-       When onions start to turn golden add garlic

-       Sautee garlic and onions for 1-2 min on medium heat

-       Get the washed and strained spinach and with your hands take each handful at a time and squeeze excess water out and drop it in the skillet

-       Do that until all the spinach is done and make sure the heat is low to avoid burning onions

-       Mix ingredients together until the spinach begin to wilt

-       Add lemon juice and salt to taste to finish it off
