Quinoa Tabbouli Salad

Ingredients

-       ¼ cup Quinoa

-       1 medium size onion- very finely chopped

-       5 cups very finely chopped parsley

-       ¼ cup finely chopped mint

-       3 large tomatoes – finely chopped

-       ½ green Pepper (Optional)

-       1 small Persian Cucumber (Optional)

-       Salt, pepper, cinnamon

-       ¼ cup Lemon juice

-       ¼ cup Olive oil

Preparation

 

-       Rinse Quinoa very well

-      Cook Quinoa as directed on the package and  leave on the side

-      In a large bowl, mix chopped onions with salt, pepper, and cinnamon until onions turn brownish

-      Add quinoa, parsley, mint,
and tomatoes on top of that mixture and mix

lemon juice
and olive oil. Mix all ingredients one more time.  

**You can enjoy this
salad in Lettuce wraps as well.
