Sweet Potato, Brussel sprouts and apple hash

Ingredients

peeled and cubed 2 red apples

bag of Brussel sprouts sliced 1 sweet potato

Sweet potato, peeled and cubed

red apples, diced

tablespoons olive oil

tablespoons thyme, dried

cub vegetable stock

Preparation

heat 2 tablespoons of olive oil in cast iron skillet over medium-high heat. 5 min.

Cook sweet potato with 1/2 tbsp of dried thyme for 5 min

add Brussels sprouts, 1/2 Tbsp of dried thyme & 1/3 cup of Broth.

Stir Often to prevent sticking. Add more broth as needed. Cook for 10 min.

add apples continue to stir
