Quinoa Tabbouli Salad


  • ¼ cup Quinoa
  • 1 medium size onion- very finely chopped
  • 5 cups very finely chopped parsley
  • ¼ cup finely chopped mint
  • 3 large tomatoes – finely chopped
  • ½ green Pepper (Optional)
  • 1 small Persian Cucumber (Optional)
  • Salt, pepper, cinnamon
  • ¼ cup Lemon juice
  • ¼ cup Olive oil


  • Rinse Quinoa very well
  • Cook Quinoa as directed on the package and leave on the side
  • In a large bowl, mix chopped onions with salt, pepper, and cinnamon until onions turn brownish
  • Add quinoa, parsley, mint, and tomatoes on top of that mixture and mix
  • lemon juice and olive oil. Mix all ingredients one more time.

**You can enjoy this salad in Lettuce wraps as well.
